QEEMA PARATHA {stuffed mince paratha }
mince filling for various recipes.
mince 1/2 kg
onion 1 large grated
ginger paste 1 tsp
garlic paste 1 tbsp
red chili flakes 1 tsp
salt 1 tsp
turmeric 1/2 tsp
khatai pwd 1 tbsp
garam masala pwd 1/2 tsp
cumin seeds 1 tsp,coriander seeds 1 tsp (dry roasted and crushed )
tamarind paste 2 tbsp
oil 1 tbsp
fresh mint 1/2 bunch finely chopped
green chili 3 finely chopped
METHOD:
first put oil in a frying pan and add g.g paste and mince.
cook till all water gets dry from mince.
then add all spices.
mix and add tamarind paste.
mix and cook till water gets dry.
add water to cook the mince completely.
when mince gets ready add onion (squeeze all water )
add mint and green chilies.
cook till all water gets dry.
cool it down and fill in any thing.
make 2, 6 inch layered parathey and place stuffing 2,3 tbsp.on 1 paratha.
spread it evenly,but leave the edged about 1/2 inch
cover with second paratha.
press down all edges nicely.
put it on flat tawa and put some ghee on both sides.when become golden.remove it and put it on a kitchen towel to remove excess oil.
serve with salad,chatni,raita and achaar.
