Aaloo ka Raita ( potato and yogurt dip )
Aaloo ka raita
for hot summer lunches.
potatoes 4 large peeled and cubed.
( boiled or deep fried, up to you )
onion finely chopped 1 large
fresh coriander and mint.
or just fresh curry leaves.as you prefer
green chilies 3,4 finely chopped
yogurt 1/2 kg
salt 3/4 tsp or to taste
black pepper pwd 1 tsp
for baghaar : ( condamint )
oil 1/4 cup
curry leaves 5,6
red chili flakes 1 tsp
cumin seeds 1 tsp
first whisk yogurt and add salt,pepper coriander,mint or curry leaves (or you can add just only one green )
boil or fry potatoes and add them in the yogurt.
drain oil from fried ones.
now pour oil in frying pan and add cumin in it,
when it crackled add curry leaves and chili flakes.
turn the flame immedietly.
pour it on yogurt and mix it.
garnish with more coriander and serve.
it will be more delicious when chilled.
