Pudina Raita Masala
Recipe in English:

Ingredients:
-Podina (Mint leaves) 1 & ½ bunch
-Hara dhania (Fresh coriander) ½ bunch
-Sabut kali mirch (Black peppercorns) 2 tsp
-Namak (Salt) 1 tbs
-Kala namak (Black salt) 1 & ½ tbs
-Lehsan powder (Garlic powder) 1 & ½ tbs
-Zeera (Cumin seeds) 1/3 Cup

Directions:
-In frying pan,add mint leaves,dry roast until crisp & set aside.
-In frying pan,add fresh coriander and dry roast until crisp (approx.7-8 minutes) and set aside.
-In frying pan,add black peppercorns,roast for 1 minute.
-In spice mixer,add roasted black peppercorns,salt,black salt,garlic powder and grind to make a fine powder & set aside.
-In frying pan,add cumin seeds,roast until fragrant.
-In mortal & pestle,add roasted cumin seeds and crush coarsely.
-Now add ground spices and mix until well combined.
-Add dried & crushed mint & coriander leaves and mix well.
-Podina raita masala is ready!
-Can be stored in air tight container for up to 2 months.

Ajza:

-Kala namak (Black salt) 1 & ½ tbs

-Zeera (Cumin seeds) 1/3 Cup

Directions:
-Frying pan mein podina dal dein aur crisp hunay tak dry roast ker lein aur side per rakh dein.
-Frying pan mein hara dhania dal dein aur crisp hunay tak dry roast ker lein (approx.7-8 minutes) & side per rakh dein.
-Frying pan mein sabut kali mirch dal dein aur ek minute kliya roast ker lein.
-Spice mixer mein roasted kali mirch,namak,kala namak aur lehsan powder dal dein aur grind ker ka fine powder tayyar ker lein & side per rakh dein.
-Frying pan mein zeera dal dein aur khushbu anay tak roast ker lein.
-Mortal & pestle mein roasted zeera dal dein aur coarsely crush ker lein.
-Ab ground spices dal ker ache tarhan mix ker lein.
-Dried & crushed podina aur hara dhania dal ker ache tarhan mix ker lein.
-Podina raita masala tayyar hai.
-2 months tak air tight container mein store ker saktay han.
