Spinach Pizzas,
Spinach is one ingredient you might never have thought of adding to pizzas, but interestingly, the effect is fabulous! Together with onions and paneer, spinach makes a mouth-watering topping for pizzas, further enhanced by the addition of capsicums, herbs, seasonings, cheese and sauces that are typical of pizzas. You will love the interplay of textures and flavours in this Spinach Pizza, especially if you have it right after it is ready.
Preparation Time: 20 minutes.
Cooking Time: 3 minutes.
Makes 2 pizzas.
Baking Temperature: 200°C (400°F).
Baking Time: 20 minutes.
2 pizza base (7” each)
For the spinach topping
1¼ cups chopped and blanched spinach (palak)
1 tbsp oilve oil
2 tbsp finely chopped onions
1 tsp roughly chopped green chillies
Salt and freshly ground black pepper (kalimirch) to taste
1 tbsp fresh cream
¼ cup paneer (cottage cheese) cubes
For the topping
4 tbsp tomato ketchup
¼ cup sliced red capsicum
¼ cup sliced yellow capsicum
Salt to taste
½ cup grated processed cheese
Dry red chilli flakes for sprinkling
Dried oregano for sprinkling
For the spinach topping
1. Heat the olive oil in a broad non-stick pan, add the onions and green chillies and sauté on a medium flame for 30 seconds.
2. Add the spinach, salt and pepper, mix well and cook a medium flame for 1 minute.
3. Add the fresh cream and paneer, mix well and cook a medium flame for 1 minute. Keep aside.
How to proceed
1. Divide the spinach topping into 2 equal portion. Keep aside.
2. Place a pizza base on a clean, dry surface, spread 2 tbsp of tomato ketchup and spread it evenly.
3. Spread a portion of the spinach topping and spread it evenly.
4. Top with a few sliced red capsicum, sliced yellow capsicum, sprinkle little salt, pepper powder and ¼ cup of cheese.
5. Finally sprinkle red chilli flakes and dried oregano evenly over it.
6. Repeat step 2 to 5 for make 1 more pizza.
7. Bake in a preheated oven at 200°C (400°F) for 15 minutes or till the base is evenly browned and the cheese melts.
Serve immediately.
