Stuffed Dahi Vada
Dahi vada is a traditional Indian snack prepared on special occassions. This stuffed dahi vada is not all that difficult to make. We enjoy this type of dahi vada on road side thelas or restaurants but this time prepare yourself & enjoy.
Ingredients
For chutney
Jaggery...............................1/2 cup.
Mango powder...................1/2 cup.
Sugar...................................1/2 cup.
Masala..................................zeera, blake, salt, plain salt & red chilli powder all half tea sp.
for sweet curd
sweet curd............................250 gms
sugar......................................1/2 cup
For diluted curd
Curd............................................ 1/2 cup
Water............................................ for dilution
Red chilli powder........ ................a pinch
Salt................................................ a pinch
For stuffing
Raisins......................... ................2 tsp
Green chilli..................................2 cut
Green coriander..........................few
Ginger ...........................................1/2 tsp (grated)
For vada
Urad dal........................................ 1 cup (soaked overnight)
Moong dal.................................... 2 tsp (soaked overnight)
salt................................................. to taste
red chilli powder........................... 1/2 tsp
baking powder.............................1/2 tsp
hing............................................... a pinch
Masala for sprinkle
Zeera .............................................1/2 tsp
Salt..................................................1/2 tsp
Black salt........................................1/2 tsp
Red chilli...........................................1/2 tsp
Oil...................................................... for frying
Method
1) Take water - 1 glass in a boiler, add jaggery & mango powder, keep stirring add red colour if you like add ground masalas and make it thick you can store this chutney.
2) Sweet curd - 250 gram sugar - 1/2 cup. Mix well both the things and chill it.
3) Sour curd mix water for soaking dahi vada, add little bit of salt & chilli powder.
4) Filling for dahi wada, add green chillis, raisins coriander leaves and grated ginger mix well.
5) Soak urad daal - 1 cup and 2 handful of moong daal , grind it after - 10-12 hours add salt , red chilli powder & heeng, mix well add 1/2 tea sp baking powder also.
6)Take a wok put oil for frying heat it well.
7) Take a katori or plate cover with polythene paper apply water , put a spoon of batter spread it, put filling fold it with polythene and fry carefully from both the sides.
8) Take out and dip into the sour curd now plate it, garnish with sweet curd, chutney and masala.
9) Serve chilled with food or as a snack.
