Rajma and Cheese Grilled Sandwich
The Rajma and Cheese Grilled Sandwich is quite easy to make, but absolutely tasty and sumptuous too! The rajma stuffing, cooked with tomatoes, onions and other ingredients, gives this sandwich a Mexican touch, which is quite enthralling. You will enjoy the buttery crispness of the bread, the contrasting texture of the stuffing, the scrunch of spring onions, the spiky flavour of green chillies, and the ever-green appeal of molten cheese in these sandwiches. Serve the Rajma and Cheese Grilled Sandwich immediately on grilling, to ensure a perfect experience.
Preparation Time: 20 minutes.
Cooking Time: 30 minutes.
Makes 6 sandwiches.
12 bread slices
6 cheese slices
Butter for brushing, greasing and cooking
To be mixed into rajma stuffing
1 cup soaked, boiled and coarsely crushed rajma (kidney beans)
½ cup finely chopped onions
½ cup finely chopped tomatoes
¼ cup finely chopped spring onion whites and greens
1 tsp finely chopped garlic (lehsun)
1 tbsp finely chopped green chillies
½ tsp chilli powder
Salt to taste
1. Divide the rajma stuffing into 6 equal portions.
2. Place 4 bread slices on a clean, dry surface and spread a little butter evenly over it.
3. Spread two portion of the rajma stuffing on 2 buttered slices and place 2 cheese slice over it.
4. Sandwich it using the remaining 2 buttered slices of bread with the buttered side facing downwards.
5. Grease the upper side of the bread slice using a little butter.
6. Grill in a pre-heated greased sandwich griller for 4 to 5 minutes or till they turn crispy and brown from both the sides.
7. Cut each sandwich into 2 equal pieces diagonally.
8. Repeat steps 2 to 7 to make 4 more sandwiches.
Serve immediately.
