Chicken Kofta without Khus Khus
spicy and yummy chicken koftey
INGREDIENTS FOR MINCE :
chicken mince 1 kg
roasted gram flour 1/2 cup
cashew and melon seeds paste 2 tbsp heaped
garlic paste 1 tsp heaped
ginger paste 1 tsp leveled
turmeric 1/2 tsp
salt 1 tsp or to taste
red chili pwd 2 tsp
cumin pwd 1 tsp
garam masala pwd 3/4 tsp
Yogurt 2 tbsp heaped
fried onions 2 tbsp
eggs 2
coriander 4 tbsp
green chilies chopped 4
INGREDIENTS FOR GRAVY:
garlic paste 1 tbsp
ginger paste 1 tbsp
ginger sliced 2 inch piece
cashew and melon seeds paste 1/2 cup
fresh coriander leaves 2 tbsp
green cardamoms 6 (grind only seeds of both cardamoms )
black cardamoms 3
nutmeg and mace pwd 1/2 tsp
garam masala pwd 1/2 tsp
turmeric 1/2 tsp
coriander pwd 1.5 tbsp
red chili pwd 1.5 tbsp
cumin pwd 1 tsp
salt 1 tbsp
cloves 1/2 tsp
black pepper corn 1/2 tsp
yogurt 2 cups
fried onions 2 large
oil 1 cup
METHOD:
first in a food processor grind all above ingredients for mince .
make koftey with soft hands and place them in a tray.
In a big pot pour oil and sauty black pepper and cloves and stir for 30 sec.
then add ginger,garlic paste with all ground spices and add 1 cup water .
coarsely grind fried onions with yogurt and set it a side.
when oil comes out on top add cashew paste with yogurt mixture.
add 1 cup water and cook it covered on med flame for 3,4 minutes.
when again oil comes out and the raw flavor of pastes were gone add1 cup water and give it a boil.
add koftey in it.make single layer and cook them on med low flame for 3,4 mins .
when they take their shape add remaining if require.
give then another 2,3 mins and then add 2 cups water for gravy or as much as you want.
add ginger slices and ground spice mix(cardamoms,nutmeg and mace) and simmer it for just 2 mins.
serve with naan or chapatti.
