Chicken Masala Biryani (Street Style)
Serves 6-8
Recipe in English:
Ingredients:
-Pyaz (Onion) sliced 1 medium
-Tamatar (Tomatoes) sliced 3 medium
-Hara dhania (Fresh coriander) chopped ½ Cup
-Podina (Mint leaves) chopped ½ Cup
-Lemon juice 2 tbs
-Cooking oil 1 Cup
-Pyaz (Onion) sliced 4 large
-Hari elaichi (Green cardamom) 3-4
-Badi elaichi (Black cardamom) 2-3
-Sabut kali mirch (Black peppercorns) ½ tsp
-Laung (Cloves) 6-7
-Darchini (Cinnamon sticks) 2
-Tez paat (Bay leaves) 2
-Hari mirch (Green chilies) 5-6
-Adrak lehsan paste (Ginger garlic paste) 3 tbs
-Pani (Water) 1-2 tbs
-Dhania powder (Coriander powder) 2 tbs
-Haldee powder (Turmeric powder) 1 tsp
-Garam masala powder 1 tsp
-Paprika powder ½ tbs
-Lal mirch powder (Red chili powder) 1 & ½ tbs or to taste
-Namak (Salt) 2 tsp or to taste
-Chicken with bones 1 kg
-Chawal (Rice) Sella/Basmati 1 kg (soaked & boiled until ¾ th done)
-Javatri powder (Mace powder) ¼ tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Pani (Water) 1-2 tbs
-Zarda ka rang (Yellow food color) ½ tsp or as required
Directions:
-In bowl,add onion,tomatoes,fresh coriander,mint leaves,lemon juice,mix well & set aside.
-In pot,add cooking oil,onion and fry until golden brown (approx. 10-12 minutes) & take out half quantity of fried onion and reserve for later use.
-Add green cardamom,black cardamom,black peppercorns,cloves,cinnamon sticks,bay leaves,green chilies and mix well.
-Add ginger garlic paste and cook for 2-3 minutes.
-Add water and mix well.
-Add coriander powder,turmeric powder,garam masala powder,paprika powder,red chili powder,salt and mix well.
-Add onion & tomato mixture,mix well and cook until tomatoes are soft.
-Add chicken and mix well until changes color.
-Cover and cook on low flame for 8-10 minutes then cook on high flame until oil separates and take out in a bowl.
-In the same pot,add half layer of boiled rice and spread it.
-Add cooked chicken and add remaining boiled rice.
-Add mace powder and nutmeg powder.
-In water,add yellow food color and mix well.
-Ad dissolve food colour and fried onion,cover and steam cook on low flame for 10 minutes.

-Zarda ka rang (Yellow food color) ½ tsp or as required
Directions:
-Bowl mein pyaz,tamatar,hara dhania,podina aur lemon juice dal ker ache tarhan mix karein & side per rakh dein.
-Pot mein cooking oil aur pyaz dal dein aur golden brown hunay tak fry ker lein (approx. 10-12 minutes) and fried pyaz ki half quantity ko bahir nikal lein bad mein use kerna kliya.
-Hari elaichi,badi elaichi,sabut kali mirch,laung,darchini,tez paat aur hari mirch dal ker ache tarhan mix karein.
-Adrak lehsan paste dal ker 2-3 minutes kliya ache tarhan paka lein.
-Pani dal ker mix karein.
-Dhania powder,haldee powder,garam masala powder,paprika powder,lal mirhc powder aur namak dal ker ache tarhan mix ker lein.
-Pyaz & tamatar ka mixture ko dal ker ache tarhan mix karein aur tamatar naram hunay tak paka lein.
-Chicken dal ker rang tabdeel hunay tak ache tarhan mix ker lein.
-Dhak dein aur halki ancch per 8-10 minutes kliya paka lein phir tez ancch per oil alag hunay tak paka lein aur bowl mein nikal lein.
-Us he pot mein boiled chawal ki half layer dal ker pheela lein.
-Cooked chicken dal ker boiled chawal ki ek aur layer laga lein.
-Javatri powder aur jaifil powder dal dein.
-Pani mein zarda ka rang dal ker ache tarhan mix ker lein.
-Dissolve zarda ka rang aur fried pyaz dal dein aur dhak ker 10 minutes kliya halki ancch per steam cook ker lein.
