Green chili and garlic pickle

Recipe in English:

Ingredients:
-Green chilies 250 gms
-Garlic cloves (Desi) 125 gms
-Salt 1 tbs
-Cumin seeds 2 tbs
-Nigella seeds 1 tbs
-Fenugreek seeds 1 tbs
-Mustard seeds 1 & ½ tbs
-Fennel seeds 1 tbs
-Sugar 2-3 tbs
-Vinegar 2 cups
-Turmeric 1 tsp
-Ginger garlic paste 1 tbs
-Oil ½ cup

Directions:

-Wash green chilies and garlic cloves, dry them properly.
-Cut green chilies from center with the help of kitchen scissor.
-Add garlic and salt in green chilies and give it a good mix and leave for half an hour.
-In grinder add cumin seeds, nigella seeds, fenugreek seeds, mustard seeds, fennel seeds and sugar and grind it until all ingredients are crushed. Achar masala is ready. (Don’t make a fine powder)
-In vinegar, add turmeric, ginger garlic paste and achar masala and mix well.
-Heat oil in wok, add green chilies and garlic cloves (coated with salt), saute on high flame for 5 minutes.
-Now add vinegar mixture and cook for 5-7 minutes until oil comes on surface.
-Serve and enjoy.

Tips:
-Instant pickle should be made in small batches. 1/2 kg or 1 kg maximum.
-Pickle spice mix can be made in large quantity and saved for used whenever required.
-You can store at room temperature or refrigerate.
-Always use clean and dry jars.
-Don’t use wet or used spoon.
-Don't eat directly from the jar using hand as hand.


Recipe in Urdu:

Ajza:
-Hari mirch 250 gms
-Lehsan (desi) 125 gms
-Namak 1 tbs
-Zeera 2 tbs
-Kolonji 1 tbs
-Methi dana 1 tbs
-Rai 1 & ½ tbs
-Cheeni 2-3 tbs
-Sirka 2c ups
-Haldee 1 tsp
-Adrak lehsan paste 1 tbs
-Oil ½ cup

Directions:
-Hari mirch aur lehsan ko dho ker ache tarhan sukha lein.
-Hari mirch ko kitchen scissor ki madad sa bech mein sa cut ker lein.
-Ab hari mirch mein lehsan aur namak dal ker ache tarhan mix ker lein aur adha ghantay kliya chor dein.
-Grinder mein zeera,kolonji,methi dana,rai,sauf aur cheeni shamil ker k itna grind karein k tamam masala crush ho jaye.Achar masala tayyar hai.(powder nahi bananana hai)
-Sirka mein haldee,adrak lehsan paste aur achar masala dal ker ache tarhan mix ker lein.
-Karhai mein oil garam karein,ab is mein hari mirchein aur lehsan (coated with salt) shamil ker k tez ancch per 5 minute kliya saute karein.
-Ab is mein sirka mixture dal ker 5-7 minutes kliya paka lein yahan tak oil upper ajaye.

Tips:
-Instant pickle hamesha kam quantity main banana ziada behtar rehta hai. 1/2 kg se 1 kg jo jald hi istemal hojaye.
- Achar ka masala mixture banakar rakh len aur jab achar banana ho tu istemal karlen.
-App is achar ko room temperature mein store ker sakte han ya phir refrigerate ker lein.
-Hamasha saaf aur sukha jar istamal karein.
-Geela or jhoota chamcha istamal na karein.
- Achar hath se jar main se na nikalen, spoobn ka istemal karen.
