Serves 8-10
Recipe in English:

Ingredients:
-Cooking oil 1 tbs
-Lehsan (Garlic) 8 cloves
-Hari mirch (Green chilies) 14-15
-Badam (Almonds) 14-15
-Laung (Cloves) 5-6
-Hari elaichi (Green cardamom) 10-12
-Jaifil (Nutmeg) ½ piece
-Javatri (Mace) 1 piece
-Mutton mix boti 750 gms
-Lemon juice 1 & ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Dahi (Yogurt) whisked 1 Cup
-Zeera (Cumin seeds) 1 tsp
-Garam masala powder 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) 1 & ½ tbs
-Podina (Mint leaves) ¼ Cup
-Hara dhania (Fresh coriander) ¼ Cup
-Pyaz (Onion) fried 1 Cup
-Doodh (Milk) hot ¾ Cup
-Cooking oil hot ¾ Cup
-Hari mirch (Green chilies) 6-8
-Podina (Mint leaves) chopped handful
-Hara dhania (Fresh coriander) chopped handful
-Pyaz (Onion) fried
-Chawal (Rice) basmati ½ kg (soaked & boiled until 3/4th done)
-Pyaz (Onion) fried

Directions:
-In small frying pan,add cooking oil,garlic and green chilies,fry for 2-3 minutes & set aside.
-In small frying pan,add almonds,cloves,green chilies,nutmeg,mace and roast until fragrant & let it cool.
-In spice mixer,add roasted spices and grind to make a fine powder and reserve half quantity for later use.
-In remaining ground spices,add fried green chilies+garlic and grind well & set aside.
-In bowl,add mutton mix boti,lemon juice,ginger garlic paste and salt,mix well,cover and marinate for 30 minutes.
-Now add grinded green chilies paste,yogurt,cumin seeds,garam masala powder,turmeric powder, coriander powder,mint leaves,fresh coriander,fried onion and mix well.
-Cover and let it marinate for 2 hours to overnight in refrigerator.
-In pot,add marinated mutton and hot milk,mix well and cook for 6-8 minutes.
-Cover and cook on medium flame for 12-15 minutes.
-Add hot cooking oil and mix well.
-Add green chilies and mix.
-Add mint leaves,fresh coriander and mix well.
-Add reserved ground spices,fried onion,boiled rice,fried onion and remaining reserved ground spices, cover and steam cook for 8-10 minutes.

Directions:
-Chotay frying pan mein cooking oil,lehsan aur hari mirch dal dein aur 2-3 minutes kliya fry ker lein & side per rakh dein.
-Chotay frying pan mein badam,laung,hari mirch,jaifil aur javatri dal dein aur khushbu anay tak roast ker lein & thanda ker lein.
-Spice mixer mein roasted spices dal ker ache tarhan grind ker ka powder tayyar ker lein aur half quantity ko nikal ker bad mein use kerna kliya rakh dein.
-Baqi ground spices mein fried hari mirch+lehsan dal ker ache tarhan grind karein & side per rakh dein.
-Bowl mein mutton mix boti,lemon juice,adrak lehsan paste aur namak dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Ab grinded hari mirch paste,dahi,zeera,garam masala powder,haldee powder,dhania powder,podina, hara dhania aur fried pyaz dal ker ache tarhan mix ker lein.
-Dhak dein aur 2 hours ya overnight kliya refrigerator mein marinate ker lein.
-Pot mein marinated mutton aur doodh hot dal ker ache tarhan mix karein aur 6-8 minutes kliya paka lein.
-Dhak dein aur darmiyani ancch per 12-15 minutes kliya paka lein.
-Hot cooking oil shamil karein aur ache tarhan mix ker lein.
-Hari mirch dal ker mix karein.
-Podina aur hara dhania dal ker ache tarhan mix ker lein.
-Reserved ground spices,fried pyaz,boiled chawal,fried pyaz aur resreved ground spices dal dein aur dhak ker 8-10 minutes steam cook ker lein.
