QEEMA BIRYANI
,its super yummy Alhamdulillah.
beef or mutton mince coarse quality { hath ka kutta hoa } 1 kg
rice best quality 2.5 cups
soak for 15 mins and boil 70 % with 5 cloves,5 green cardamoms and 1 cinnamon stick.add 5 tbsp salt for 2.5 cups rice in plenty of water.drain all the water and put rice in a strainer.
tomatoes cut round of 1/4 inch thickness 2 med
ginger 2 inch fine sliced
green chilies 6,7
mint 1 bunch
fresh coriander 1 bunch
onion 2 med sliced
oil 1 cup
ghee 1 tbsp full
B.pepper corn 1 tsp
B.cardamom 2
cloves 7
G.cardamoms 5
bay leaves 3
star anise 1
cinnamon stick 1 inch
red chili pwd 1.5 tbsp
coriander pwd 1 tbsp
salt 1.5 tsp
cumin seeds 1 tbsp
turmeric 1 tsp
whole spice pwd 1/2 tsp
ginger paste 1 tsp
garlic paste 1.5 tbsp
FOR JHOOL :
Yogurt 1/2 cup
milk 2,3 tbsp
food color 1/4 tsp
G.cardamom pwd 1/2 tsp
nutmeg pwd 1/2 tsp
mace pwd 1/2 tsp
kewra essence 1/2 tsp
METHOD:
first make jhool by adding ingredients in yogurt and set it a side.
boil rice 70 % with the ingredients.
now pour oil in a pan and fry onions till nicely brown.
take out half amount for layering.
add whole garam masala in pan.
add mince and G.G pastes in it.
mix and cook untill all water gets dry from meat.
now add all dry spices and give it a minute.
now add yogurt and mix.
add tomatoes immedietly if you want them not to cook like a paste.if not add 5 minutes later.
cook mince in yogurt and tomatoes water for 20 minutes on med low flame.
when mice gets completely soft and tender make layers on it.
add green chilies,fresh coriander half,mint leaves half,onion fried half.
spread rice on them.
add remaining coriander,mint,fried onions.
spread 1 tbsp full ghee on 3,4 sides.
pour jhool on 3,4 sides ans cover the lid with a tea towel.
put it on a hot flat tawa first on med flame for 5 minutes and then turn the flame to low for 10,12 minutes more.
serve with raita and salad.
