VEGETABLE PULAO
INGREDIENTS:
rice 3 cups good quality soaked for half hour.
potatoes 4 cubed
carrots 4 sliced
cabbage 1 small sliced
green peas 1 cup
bell pepper 2 cubed
green onion 1 cup chopped
tomatoes 2 med round sliced
ginger 1 inch sliced
green chilies 4 chopped
onion 1 large sliced
SPICES:
garlic paste 1.5 tbsp
chicken cubes 3 mix in 1.5 cups of hot water
red chili flakes 1 tbsp
salt 1.5 tsp for vegetables and 1 tbsp for rice
oil 1 cup
cumin seeds 1 tbsp
fennel seeds 1/2 tbsp
black cumin 1/2 tbsp
cloves 5
black pepper 1 tsp
black cardamoms 2
cinnamon stick 2 inch 2
bay leaves 3 small
green cardamoms 4
METHOD:
first preheat oil in a big pan.
fry onion till slightly brown in color.
add whole spices except white and black cumin,fennel seeds.
fry for a minute.
add garlic paste,and w+b cumin and fennel seeds.
add 1/4 cup water and cook .till water gets dry.
add tomatoes and ginger.
add 1/4 cup water to cook tomatoes properly.
now add potatoes first and cook 6,7 minutes on med low flame.
add carrots and peas.
cook another 5 mins.
add bell peppers,green chilies and cabbage and cook another 5 mins.
add water if required at any stage.
when all veggies get soft add rice with chicken broth.
adjust salt at that point.
add green onions.
mix gently and add 3.5 cups water totally for 3 cups rice.
check gravy in your veggies and then add water as much as you need.
cook on med high flame .
when water gets dry put a flat tawa on the stove on high flame.
place pan on it and cover it with a kitchen towel.
simmer on high flame for 5,6 mins first then turn the flame to low and simmer another 10 mins
serve with raita,chatni and salad.
