sonth imli ki chatni
SONTH IMLI KI CHATNI
ingredients:
imli ( tamarind ) 250 gm
sonth ( ginger pwd ) 1 tbsp leveled
salt 1 tsp
red chili pwd 1 tsp
dry roasted crushed cumin 1 tsp
sugar 200 gm
METHOD:
first soak tamarind in a bowl over night.
squeeze all pulp and remove seeds from the soft shells.
grind sells and mix them in the pulp.
pour it in a saucepan and add salt,cumin and chili pwd.
mix and cook 15 mins on low flame.
when reduced 1 portion add ginger pwd (sonth ) in it.
cook another 10 mins on low flame.
add sugar in it.
again cook 15 mins on low flame or un til you will satisfied with the consistency.
strain it in a sieve to separate sauce from the lumps.
consistency should not be very thick because it will be more thick when cool.
check the salt to your taste and turn the flame off.
cool it down and then refrigerate it in an air tight jar or container.
it lasts up to one month in the fridge but it will finish in 2,3 days for sure
