Balushahi Recipe in English:

Ingredients:
Prepare Sugar Surup (Sheera):
-Cheeni (Sugar) 2 Cups or to taste
-Pani (Water) 1 Cup
-Lemon juice few drops
Prepare Dough:
-Maida (All-purpose flour) sifted 1 & ½ Cups
-Baking soda ¼ tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Namak (Salt) ¼ tsp
-Ghee melted 2 & ½ tbs
-Dahi (Yogurt) whisked 3 tbs (room temperature)
-Pani (Water) ¼ Cup or as required
-Ghee for frying
-Pista (Pistachio) for garnishing

Directions:
Prepare Sugar Syrup (Sheera):
-In saucepan,add sugar and water,mix well and cook on low flame until sugar is dissolved and continue cook until syrup becomes thick.
-Add lemon juice,mix well & set aside.
-Sugar syrup (sheera) is ready!
Prepare Dough:
-In bowl,place sifter,add all-purpose flour,baking soda and sift together.
-Add nutmeg powder,cardamom powder,salt and mix well.
-Add ghee and mix well.
-Add yogurt and mix well until crumbled.
-Gradually add water and mix until combined (don’t over knead),cover and let it rest for 15 minutes.
-Grease hands and working surface with oil and flatten the dough & roll it.
-Cut the dough with the help of the cutter.
-Take a small dough,make a ball and with the help of the thumb press from the center.
-In wok,add ghee and let it melt,fry dough on low flame for 20-25 minutes.
-After frying,add bhalo shahi in warm sugar syrup (sheera) and leave them for 10-15 minutes and take out in a serving plate.
-Garnish with pistachio & serve.

-Saucepan mein cheeni aur pani dal ker ache tarhan mix karein aur halki ancch per cheeni dissolves ho janay aur sheera garha hunay tak paka lein.
-Lemon juice dal ker ache tarhan mix karein & side per rakh dein.
-Sheera (sugar syrup) tayyar hai!
Prepare Dough:
-Bowl mein sifter rakh dein,maida aur baking soda dal ker ek saath sift ker lein.
-Jaifil powder,elaichi powder aur namak dal ker ache tarhan mix ker lein.
-Ghee dal ker ache tarhan mix karein.
-Dahi shamil karein aur crumbled hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ache tarhan mix ker lein (don’t over knead) aur dhak ker 15 minutes kliya rakh dein.
-Haathon aur working surface ko oil sa grease karein aur dough ko flat ker lein phir roll ker lein.
-Cutter ki madad sa dough ko cut ker lein.
-Chota dough lein aur ball bana lein aur thumb ki madad sa center ko press ker lein.
-Karhai mein ghee garam karein aur dough ko halki ancch per 20-25 minutes kliya fry ker lein.
-Frying ka bad bhalo shahi ko warm sheera mein 10-15 minutes kliya dal dein aur serving plate mein nikal lein.
-Pista sa garnish ker ka serve karein.
