Chinese Okra Ki Subzi
Ingredients
1. Chinese okra- 1 1/2 pounds
2. Cooking oil- 4 tablespoons
3. Onions -2 medium size chopped
4. Tomatoes- 2 medium size chopped
5. Green coriander 1/2 cup chopped
6. Green chilies 2 to 3 cut in slices
7. Salt- 1teaspoon
8. Cumin seeds- 1teaspoon
9. Crushed red chilies- 1teaspoon
10. Turmeric powder- 1/2 teaspoon
11. Optional 1/2 of lime juice
Directions
First prepare the Chinese okra. Cut off the ends and peel off the ridges then rinse the Chinese okra under cool water and chop into bite-size pieces.
Heat oil in a medium size pot over the medium heat. When the oil is hot, add cumin seeds and allow it to pop for about 30 seconds. Add chopped onions and stir well. Adjust the heat so that the onions cook but do not brown or burn.
When the onions are mostly cooked through and are beginning to look translucent, add turmeric powder and crushed red chilies. Cook for a minute or two.
Add chopped tomatoes, cook them till become soft. When they are soften add the chopped Chinese okra and salt. Stir well.
Cover it and cook for 15 minutes, stirring occasionally. Add green chilies and check how much liquid has released, if there is lot of liquid remove the lid and allow to cook uncovered.
Cook for another 10-15 minutes, or until the Chinese okra has broken down completely and texture is soft but should not be mushy. Add lime juice and chopped coriander.
Serve with rice or chapati.
