Aam Ki Kheer from Maimoona Yasmeen’s Recipes
Balai wala doodh (full fat milk): 1 litre + 1/4th cup
Aam (mango): 1 + 1 sajane ke liye (for garnishing)
Chawal (rice): ½ cup
Khowa: 100 grams
Shakar (sugar): 160 grams
Elaichi powder (cardamom powder): ½ teaspoon
Custard powder: 1/4th cup
Kate hue badam aur piste (sliced almonds and cashews): mutthi bhar (a handful)
Procedure:
1. Aadha cup chawal aadhe ghante ke liye bhigaiyye.
2. Chawal ko grind karke bareek paste bana lijiye.
3. Ek litre full fat milk ko achhi tarah se ubaal lijiye.
4. Ubal aane tak is mein hilate rahiye.
5. Chawal ka paste doodh mein daliye aur paanch minute tak pakaiyye.
6. Ek sau saath ya 160 grams shaker daliye aur sau graam khowa daliye.
7. Das minute tak pakaiyye, ke shakar is mein achhi tarah se ghul jaaye.
8. Aadha teaspoon elaichi powder daliye.
9. Pau ya 1/4th cup thande doodh mein pau cup custard powder mila lijiye.
10. Ab yeh custard mix, dodh mein dalkar hilate rahiye take lumps na bane.
11. Paanch minute tak hilane ke baad, ek aam ka paste daliye.
12. Achhi tarah se ise blend kar lijiye.
13. Aanch band kar dijiye.
14. Thanda hone par, kate hue aam ke pieces, badam aur piste se sajaiye.
