FOR YAKHNI:
chicken 1/2 kg
green chilies 5
onion 1 medium
garlic 1/2 bunch
ginger 1 inch
cloves 1/2 tsp
black pepper corn 1/2 tsp
water 4 or 5 glass
salt 1 tbsp
FOR BAGHAR:
good quality basmati rice 1.5 cups ( rinse 4,5 times and soaked for 30 minutes )
cumin 1 tsp
big cardamoms 2
cinammon stick 2,3 small pieces
bay leave 2,3
green cardamoms 4
fried onion 1 cup
ginger paste 1 tbsp
garlic paste 1 tbsp
salt to taste
knor chicken or pulao cubes 2
ginger 1 inch thinly sliced
bullet green chilies 2,3 chopped
yogurt 1 cup
oil 1/2 cup
METHOD:
first make yakhni by boiling all ingredients together for 25 to 30 minutes and reduce it to 3 cups.
now pour oil in a pot and add fried onion with all whole spices.
mix and give it 30 sec.
then add ginger garlic paste and pulao cubes in it.
add quarter cup water and cook on high flame for a minute.
mean while strain yakhni in another pot and separate chicken from it.
when masala cooked completely add chicken with yogurt ,ginger and green chilies.
mix it well and cook it for a minute on high flame.
when oil comes out on top add rice in it.
add 2.5 glass yakhni for 1.5 glass rice.
check the salt and adjust it to your taste.
cook on med flame till all water dries out.
mean while preheat a flat tawa on another stove.
cover the lid with a kitchen towel and simmer it on tawa for 12 to 15 minutes.
turn the flame to med for first 5 minutes then slow it down to low for remaining 10 minutes.
serve with salad,red chatni and raita
