Matar Chawal
Recipe in English:
Ingredients:
-Oil ½ cup
-Pyaz (Onion) Sliced 1 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Zeera (Cumin seeds) 1 tsp
-Tez paat (Bay leaf) 1
-Darchini (Cinnamon stick) 1
-Badi elaichi (Black cardamom) 3-4
-Hari elaichi (Greeen cardamom) 5-6
-Kali mirch (Black pepper corns) ½ tsp
-Matar (Peas) 2 Cups
-Cheeni (Sugar) 1 tbs
-Namak (Salt) 1 tsp or to taste
-Pani (Water) 1 Cup or as required
-Dahi (Yogurt) 1 Cup
-Zarda ka rang (Yellow food color) ¼ tsp
-Hari elaichi powder (Green cardamom powder) ½ tsp
-Adrak (Ginger) Julienne 1tbs
-Hari mirch (Green chilies) 4-5
-Chawal (Rice) 2 & ½ Cups (¾th boiled with salt and whole spices)
-Kewra essence ½ tsp
Directions:
-In pot,add water,salt,whole spices,rice and boil until ¾ th done, strain and set aside.
-In pot,add oil,onion,ginger garlic paste and sauté until translucent.
-Add cumin seeds,bay leaf,cinnamon stick,black cardamom,green cardamom,black pepper corns, peas, sugar,salt and mix well.
-Add water,cover and cook until peas are done.
-In yogurt,add yellow food color and mix well.
-Add yogurt,,green cardamom powder,ginger,green chilies,boil rice and kewra essence.
-Cover and steam cook for 10-15 minutes.

-Zarda ka rang (Yellow food color) ¼ tsp
-Hari elaichi powder (Green cardamom powder) ½ tsp
-Adrak (Ginger) Julienne 1 tbs
-Hari mirch (Green chilies) 4-5
-Chawal (Rice) 2 & ½ Cups (¾th boiled with salt and whole spices)
-Kewra essence ½ tsp
Directions:
-Pot mein pani,namak,sabut garam masala aur chawal ¾ th pak janay tak paka lein,starin ker k side per rakh dein.
-Pot mein oil,pyaz aur adrak lehsan paste dal ker translucent hunay tak sauté ker lein.
-Zeera,tez paat,darchini,badi elaichi,hari elaichi,kali mirch sabut,matar,cheeni aur namak dal ker ache tarhan mix ker lein.
-Pani shamil karein,dhak ker matar gul janay tak paka lein.
-Dahi mein zarda ka rang dal ker ache tarhan mix ker lein.
-Dahi,hari elaichi powder,adrak,hari mirch,boil chawal aur kewra essence shamil karein
-Dhak ker 10-15 minute kliya steam cook ker lein.
