Ingredients;
1 ½ kg whole chicken with skin (preferred) cut in two pieces, washed and cleaned
4 cups sella basmati rice
4 medium sized tomatoes finely chopped
3 medium sized onions cut in slices
4 tablespoon ghee
2 tablespoon tomato paste
2 teaspoon salt or according to your taste
8 to 10 garlic cloves chopped
3 dried bay leaves
1/2 teaspoon black pepper corns
1/2 teaspoon cloves
1/2 teaspoon green cardamoms
Two pieces of 2 inch cinnamon sticks
2 dried black lemon
40 grams blanched almonds
50 grams lightly fried raisins
1/2 teaspoon ground white pepper
Pinch of saffron (Soaked it in warm milk)

Ingredients for Kabsa (Bahārāt) spice mix
1/2 teaspoon red chili powder
1 teaspoon cloves
1 ½ teaspoon cumin seeds
1 teaspoon black pepper
1/2 teaspoon green cardamoms
One small piece of nutmeg
1/2 teaspoon turmeric powder
Combine all the spices and grind them to a fine powder
