AALOO GOBHI GAJAR ki sabzi
Ingredients:
aaloo 4 med cubed
carrot 250 gm
cauliflower 1/2 kg
tomatoes 300 gm red n ripe (peeled n chopped )
green chilies 3 chopped
ginger 1 inch jullianne
fresh coriander 1/2 cup
red chili pwd 1/2 tsp
salt 1 tsp full
red chili flakes 1/2 tbsp
cumin seeds 1 tsp
cumin pwd 1/2 tsp
turmeric 1/4 tsp
coriander pwd 1/2 tbsp
carom seeds 1/4 tsp
garam masala pwd 1 tsp
G.G paste 1 tsp full
oil 1/2 cup
METHOD:
in oil add tomatoes with G.G paste and all spices except garam masala pwd and mix for 1 min.
then add 1/2 cup water and cover with the lid and cook on med low flame til tomatoes become paste.
now add carrots,cauliflower and potatoes.
separate floral portion of cauliflower for just 5 min.you add it later.
now cook it with tomatoes for a min then add 1/2 cup water and cover.
cook on med low flame for 5,8 mins.
then add floral part and mix it well.
now add another 1/4 cup water and cover the lid.
cook it on very low flame for 10 to 12 mins.
when veggies become 95% tender add ginger,green chilies,half coriander and garam masala and simmer for 2,3 mins.
then serve with naan.
