• BAISAN (GRAM FLOUR) 1 CUP
• PANI (WATER) 2 CUPS
• DAHI (YOGURT) SOUR 2 & ½ CUP
• PANI (WATER) 1 CUP
• PANI (WATER) 6-8 CUPS
• PYAZ (ONION) FINELY SLICED 2 TBS (OPTIONAL)
• KASURI METHI (FENUGREEK LEAVES) 1 TSP (OPTIONAL)
• ADRAK LEHSAN PASTE (GINGER GARLIC PASTE) 1 TBS
• LAL MIRCH GOL (WHOLE RED CHILIES) 6-8
• ZEERA (CUMIN SEEDS) 1 TSP
• KARI PATA (KARI LEAVES) 6-8
• HARI MIRCH (GREEN CHILIES) 2
• HALDEE (TURMERIC) 1 TSP
• LAL MIRCH POWDER (RED CHILI POWDER) 1 TSP OR TO TASTE
• NAMAK (SALT) 1 & ½ TSP OR TO TASTE

PAKORA
• BAISAN (GRAM FLOUR) 2 CUPS
• NAMAK (SALT) 1 TSP OR TO TASTE
• LAL MIRCH POWDER (RED CHILI POWDER) 1 TSP
• HARI MIRCH (GREEN CHILIES) CHOPPED 1-2
• HARA DHANIA (CORIANDER LEAVES) 2 TBS
• PANI (WATER) AS REQUIRED
• OIL FOR FRYING
TARKA
• OIL ½ CUP
• PYAZ (ONION) SLICED 2 TBS
• ZEERA (CUMIN SEEDS) ½ TSP
• LAL MIRCH GOL (WHOLE RED CHILIES) 4-6
• HARI MIRCH (GREEN CHILIES) CHOPPED 2
• KARI PATA (KARI LEAVES) 6-8
