DRY PINJIRI ( dry semolina sweet )
semilina 1 kg
sugar 2.5 cups 6625 gm
clarified butter (desi ghee ) 1 cup 250 gm
water 1 cup 250 gm
use same cup for measuring all ingredients.
kewra essence 1 tbsp
green cardamoms pwd 1/2 tsp
ghee 2 tsp
METHOD:
first dry roast semolina for 15 minutes then add ghee in it and again roast it for 10 minutes more.
stir constantly and keep the flame to med low
mean while cut your dry fruits and set them a side.
grease a tray and a pan,s flat cover .
boil water with cardamom pwd and add sugar to make a syrup.
when sugar melts in water completely add kewra essence in it.
on the other stove when you see that semolina changes its color from off white to light golden turn the flame off.
pour all the syrup in the roasted semolina and mix it quickly.
turn the stove and cook it for 3,4 mins on high flame.
when all water get evaporate and the mixture combine in the center of the wok.pour it on the greased tray.
spread it gently but quickly with the help of the pan cover or flat plate.
make a 3/4 inch layer ,do not make very thin layer so it can break easily.
sprinkle all crushed dry fruit in it and press it with your palm.
then make cuts with a knife .
set it a side to cool down for at least 2,3 hours.
my son did,t allow me to do that so my pinjiri broke in to un even pieces.
when become dry put it in an air tight container and eat when you feel cravings for some thing sweet.
