Schezwan Paneer Cold Sandwich,
The perfect sandwich for those who love Oriental cuisine! The Schezwan Paneer Cold Sandwich is marked by a really tangy and peppy flavour derived from Schezwan sauce, tomato ketchup and freshly-prepared sour cream. The tangy coating of sauces makes the otherwise plain paneer a zesty tidbit to bite into, complemented ably by juicy and spicy capsicum. All in all, this cold sandwich is a really tongue-tickling treat!
Preparation Time: 10 minutes.
Cooking Time: Nil.
Makes 4 sandwiches.
8 bread slices
To be mixed into a sour cream
½ cup thick curds (dahi)
1 tsp lemon juice
Salt and freshly ground black pepper (kalimirch) to taste
For the Schezwan paneer stuffing
¼ cup Schezwan sauce
¾ cup chopped paneer (cottage cheese)
½ cup chopped coloured capsicum (red, yellow and green)
2 tbsp tomato ketchup
Salt to taste
For the Schezwan paneer stuffing
1. Combine the coloured capsicum, Schezwan sauce, tomato ketchup and salt in a deep bowl and mix well.
2. Add the paneer and mix gently. Keep aside.
How to proceed
1. Divide the sour cream into 8 equal portions and keep aside.
2. Divide the Schezwan paneer stuffing into 4 equal portions and keep aside.
3. Place 2 bread slices on a clean, dry surface, apply a portion of the sour cream on both the bread slices.
4. Spread a portion of the Schezwan paneer stuffing on a bread slice and sandwich it using another bread slice with the sour cream side facing downwards.
5. Cut the sandwich diagonally into 2 equal pieces.
6. Repeat steps 3 to 5 to make 3 more sandwiches.
Serve immediately.
