AFGHANI (KABULI ) PULAO
ingredients for yakhni:
mutton or beef 1 kg with bones and a bit fat
ginger 1.5 inch piece/ garlic 1 whole clove
(grind them together to make G.G paste ) use 2/3 in yakhni
salt 1 tsp leveled
garam masala pwd 1 tsp
water 4 glass
onion 1 large roughly chopped
ingredients for baghar:
salt 1 tsp leveled
garam masala pwd 1/2 tsp
ghee 2 tbsp
G.G paste 1/3 remaining
yakhni 3 glass
rice washed and soaked for 1/2 hour 2 cups
GARNISHING :
black raisins 50 grams
carrots 100 grams
sugar 2 to 3 tbsp
ghee 1 tbsp
METHOD:
first put meat with water and all above ingredients in a pressure cooker and let it cook completely with 3 glass yakhni remaining in it.
now take a frying pan and put ghee in it and fry raisins in it.it will take just a min.
now add carrots in it and cook another min or so.
when meat will become tender separate it from yakhni and place it in a plate.
put 2 tbsp ghee in a nother big pot and add salt,garam masala pwd and remaining G.G paste in it.
drain all water from rice.
cook it 30 sec then add rice.
now add yakhni for cooking rice completely.
adjust salt to taste at that point.
place cooked meat on the top of rice at one side .
simmer it for 10 mins.
now serve it as shown in the picture.
