CHICKEN KARAHI BIRYANI (How to make Chicken Karahi Biryani )

CHICKEN 1 KG BIG PIECES
BASMATI RICE 3 CUPS 750 GM ( boiled 80 % )
karahi or fry masala (shan) 1 packet
tomato 3 med round sliced
ginger 1.5 inch julianne
G.G paste 2 tbsp
red chili pwd 1 tsp
turmeric 1/4 tsp
garam masala pwd 1/2 tsp
salt 1 tsp leveled
curry leaves 25
yogurt 1 cup
oil 1 cup
ghee 2 tbsp
green chilies 5,6
onion 1 large fried
kewra water 2 tbsp
food color 1 pinch

METHOD
pour oil in a pan
add fried onion and G.G paste in it.
mix and add chicken pieces and cook til chicken changes its color.
now add all spices,curry leaves and karahi masala in it with 1/4 cup water.
mix it well and cook another minute or so to remove the raw flavor of masala.
now add yogurt in it.
add 1/2 cup water and cook on med low till chicken get cooked 80 %
now add tomatoes,green chilies and ginger sliced in it .
mix and cook on med high flame now til chicken will be tender and 1/2 cup gravy will be remain in it.
make layer of boiled rice on it and drizzle kewra water and food color mixture on top.
pour 2 tbsp ghee.
keep it cooking on med high flame for 3 minutes then turn the flame to med low and place a flat tawa beneath the pot.
after 10 mins serve it with mint raita.
