HOME MADE BIHARI MASALA
dry roasted gram flour 2 tbsp
dry roasted khus khus 1 tbsp
dry roasted coriander 1 tbsp
dry roasted cumin 1 tbsp
nutmeg and mace pwd 1/2 tsp
cloves 6
B.pepper 1 tsp
B.cardamom 1
G.cardamom 4
cinnamon 2 inch
star anise 1/2
long pepper 1
B.cumin 1/2 tsp
kabab cheeni 8
dry roast all ingredients and grind them nicely
B.salt 1/2 tsp
tartaric acid 2 pinch
red chili pwd 1 tbsp
kashmiri ( paprika ) red chili pwd 1 tbsp
salt 1.5 tsp
turmeric 1/2 tsp
food color optional 1 pinch
mix all ground spices well and store in a glass container.
use 4 to 5 tbsp for 1 kg mince and 6 tbsp for 1 kg boti (steak )meat
